Grape: 100% old Grenache vines (an old Catalan variety).
Vinification: De-stemming, pressing, then temperature-controlled fermentation. Maturing in contact with air: in vats for 1 year; then 24 months in French oak barrels (2 wines old) and bottling; blended with 20% wine aged in demijohns.
Tasting note: A mahogany coloured wine with powerful aromas of orange blossom and vanilla and fine notes of oak and toast. This wine makes a great aperitif and complements a starter like foie gras well. It goes deliciously well with dry goat cheese or a Créme Catalane.
